Spring is here! Or at least that's what it felt like spending my day out in the ☀️ with my flip flops on. After the sun had set, it was time to come home but I wanted to keep the sunshine feeling alive! We had some 🍏🍏 at home and I figured what says summertime more then apple pie. But since I didn’t have a pie crust and was way too sunned out to make one from scratch, I opted for apple fritters instead! Have a lot of extra chicken from Shabbat? Mexican is a great cuisine to make with leftovers! Shred the extra chicken and roll up in flour tortillas (if you want the chicken to be more moist, pour some enchilada sauce on the shredded chicken before rolling in tortillas). Place a toothpick through the tortilla to keep it closed. Spray or brush with olive oil and bake on 425 for 15-20 min or until crispy.
