	<title>Comments on: &quot;Bacon&quot; wrapped stuffed chicken:
4 cups of fresh spinach 
1 pkg mushrooms, peeled and sliced 
1 lb boneless chicken breast, sliced very thin (I buy it pre-sliced)
Bacon (I used turkey bacon, u can also use duck or beef bacon as a bacon substitute)
Sauce:
2 Tbsp ketchup
2 Tbsp deli mustard
2 Tbsp apricot jam
Spread the spinach and mushrooms out on a baking sheet, drizzle olive oil, sprinkle salt, pepper and garlic powder. Bake for 10-20 min on 350. 
When it cools, put some on the end of each piece of chicken, and roll it up. Wrap a piece of bacon around each piece of chicken. Spray a 9&#215;13 with cooking spray, and line the chicken up in it. Mix all of the sauce ingredients together and pour it over the chicken. Put a toothpick in each one to help it stay closed. 
Bake on 350 for 30 min. Remove toothpicks before serving. (Rice is plain white boil-in-a-bag rice)
