Shred the extra chicken and roll up in flour tortillas (if you want the chicken to be more moist, pour some enchilada sauce on the shredded chicken before rolling in tortillas). Place a toothpick through the tortilla to keep it closed.  Spray or brush with olive oil and bake on 425 for 15-20 min or until crispy.
