I can't snack prep if I don't have snacks! So I whipped up a batch of my favorite "healthy" Cupcakes. Ie: Whole wheat banana chocolate chips. Here's spring in a pie dish 💕Strawberry Rhubarb Crisp with a Pistachio Crumble🍓 in honor of mommys day! My mother never really enjoyed cooking but as soon as Rhubarb hits the stores, my mom always makes a delicious strawberry rhubarb sauce😋 I topped it with my mother in laws delicious vanilla ice cream-a family favorite & secret recipe!! The pistachios were my own addition and WOW✨ did they compliment the dish!!! STRAWBERRY RHUBARB CRISP WITH A PISTACHIO CRUMBLE RECIPE⬇️⬇️ Filling: 6 stalks of rhubarb sliced 1 pint of strawberries sliced 3/4 c sugar Juice of 1/2 lemon Pinch of salt 2 tbsp cornstarch Toss to combine in a pie dish. Topping: 1 stick butter or marg softened 1 cup flour 3/4 c brown sugar 3/4 c rolled oats 1/4 c crushed pistachios Combine crumble ingredients and place on top of filling and bake on 350F for 45 minutes.
