So my mission was to make a POTATO FREE pesach dinner because 1. There's only so many potatoes a girl can eat in 8+ days, and 2. I am on the best diet in the world @nutritionbytanya (Lifesaver. Literally.) So I made zucchini stacks (potato free version of my potato herb stacks, see original post for recipe). There's the low-fat, low-guilt version, and the fat-free, guilt-free version. Obviously the more caloric version won the taste test but they're both great 😉 The London broil is so super easy- the marinade has exactly 3 ingredients! Zucchini stacks: 1 zucchini, sliced. (one zucchini makes 6 stacks). 2 garlic cubes 1 tsp salt 1 tsp paprika 1/4 tsp black pepper For low fat version: 1 tsp olive oil (I used olive oil infused with garlic and basil). For fat free version: 2 egg whites. Combine all ingredient, marinade for 20 min. Line muffin tins, and form zucchini in to short stacks and put in the tins. Bake on 350 for 30-40 min, or until cooked through. London broil marinade: 2 Tbsp lemon juice 2 Tbsp raspberry preserves 2 Tbsp bbq sauce Marinade meat for at least 30 min, then drain excess marinade and broil on high or grill until it reaches your desired level of "done-ness" :) (I like it more rare) and slice against the grain immediately before serving.
