Curry salmon over cauliflower mash. Salmon: In a saucepan, melt half a can of coconut milk (less or more depending on how spicy you like the curry). Once melted, mix a packet of the curry (from the previous post) and set aside. Heat 2T of coconut oil. Sear pieces of salmon on both sides. Once slightly browned pour the curry mixture over the fish. Bring to a slow boil, cover and lower to a simmer for a few minutes. Cauliflower mash: Microwave cut up pieces of cauliflower until cooked, about 10 minutes. Place in a food processor.
