My kids devoured this before I could snap a decent picture! But I had to share because this #childhood favorite is SO easy. And yummy too. Recipe: •2 cups rice, cooked as normal. •Once cooked remove from flame and mix in 1 can chopped tomatoes. •Put into a heat proof dish and cover with grated cheese. •Place in oven/grill for 5-7 mins. Yummy easy mini cupcakes: Mini cupcakes (BY cookbook): 5 eggs 1 c oil 1 c orange juice 1 c sugar 2 Tbsp vanilla sugar 4 tsp baking powder 3 1/2 c flour 1/2 tsp salt Combine all ingredients and bake in mini muffin tins until slightly firm. Use cupcake wrappers or spray the tins.
