White Chicken meat is used in this recipe yet is moist and tasty like dark chicken meat. By substituting the normal bread crumbs or panko crumbs with the flour and cornmeal mixture, it provides a lighter and airier crispy schnitzel for all to enjoy and savour. yields 6 portions 6 Boneless Skinless Chicken Breast 4 eggs 1/4 cup honey garlic bottled sauce (such as Mikees or VH) 2 tbsp. Garlic Powder 2 tbsp. Paprika 1/2 tsp each salt and pepper 1 cup all purpose flour 1 cup cornmeal 2 tbsp. sesame seeds 4 tbsp. canola oil extra honey garlic sauce to drizzle green onions for garnish Slice the Chicken Breast into thin scaloppini's. Flatten The fillets by covering them with saran on your cutting board and lightly pound with the bottom of an omelette plan. Mix your honey garlic sauce, eggs, garlic powder, paprika and salt/ pepper in a large bowl, add your chicken and mix well. Cover, refrigerate and allow to marinate for 12-24 hours. Once the marinating period is complete, mix your flour, cornmeal and sesame seeds into a large bowl. Add your oil to a large flat pan and pre heat to medium. Strain the chicken from the marinade and dredge each cutlet in the flour mixture and fry approx. 2 minutes on each side or until golden brown. Arrange nicely on a platter and drizzle with some more honey garlic sauce and sprinkle with sliced scallions. Serve with some steamed rice and enjoy!
